25 Days of Christmas Baking Day 11: Apple Cider Cookies

One special thing about Christmas is that it has so many amazing beverages associated with it.  Christmas beverages +Christmas cookies= even better.  So, why not make the Christmas beverage IN the Christmas cookie?  For the next three days, we will be featuring three cookies featuring three amazing Christmas beverages.  Let's start today off with the Apple Cider Cookie!

Credits for this one goes to realhousemoms.com, but I altered it because there was definitely something wrong with the texture on them.


Apple Cider Cookies
1 c. butter
1 c. brown sugar
1/2 tsp salt
1 box Spiced Cider Mix (NOT sugar free)
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/8 tsp allspice
3 c flour
1 bag of Caramels

Instructions
  1. Cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder
  2. Beat in eggs
  3. Add vanilla and mix well
  4. Gradually add dry ingredients
  5. Refrigerate for about an hour
  6. Preheat oven to 350° F
  7. Line cookie sheets with parchment
  8. When you are ready to bake, unwrap your caramels
  9. Scoop out cookie dough ball about the size of a tablespoon
  10. Flatten the ball of dough slightly in the palm of your hand
  11. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely
  12. Place on parchment covered cookie sheets 2 inches apart
  13. Bake 12-14 minutes, or until very lightly browned around the edges
  14. Once the cookies are done, slide the parchment off of the baking sheet right out onto the counter
  15. Allow cookies to partially cool on the parchment
  16. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down on the parchment  (DO NOT SKIP THIS...or your cookies will be heaped in the middle.
